With the advent of business process flows in CRM 2013, it is quick and easy to set up staged progression through a particular business process you are implementing in CRM.
Out of the box, CRM 2013 business process flows have a set of default stages. Often times, these default stage values are not relevant to the business process you are trying to implement. So how do we change these to something more pertinent?
The process is very simple and similar to the process of customizing a global option set in CRM.
First, go to Settings > Customizations and click Customize the System.
Then click on Option Sets on the left. Open the Stage Category option set in the list.
Now, you can customize the available stages just as you would any other option set.
Follow these steps and you will find that modifying the stage category for business processes in CRM 2013 is quite simple.

How is the Stage Category different from the Stage Name?
I'm having trouble with moving past the stages.Two of the stages are locked and we can not access or edit them because it says the first two stages are not completed, but they are. All required fields are filled out and nothing is left blank, but when I click "Next Stage" a pop up appears and says "Please fill out all required information." Help?
I have experienced the same issue. It seems that if I save the record via the save icon in the lower-right of the page, the flow will recover and allow you to move to the next stage. Annoying and I can only assume it's a bug and not a feature.
